Potato Bites

  • 3 potatoes, cut into medium cubes
  • 2 tablespoons lard
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups chorizo, finely chopped
  • 2 serrano chiles, in thin slices
  • 1 1/2 cups tortilla chips, ground

  • 1 cup sour cream
  • 1 cup Manchego cheese, grated
  • 1/4 cups cilantro, finely chopped

  • Heat a pot with enough water, add salt, and boil the potatoes for 20 minutes. Remove and mash the potatoes. Set aside.
  • Heat a skillet over medium heat, add lard and sauté the onion, garlic, chorizo, chili, and ground totopos; season with salt and cook for 10 minutes.
  • Mix the potatoes with the chorizo sofrito, add sour cream, manchego cheese, and cilantro. Season with salt and pepper and bake for 15 minutes at 200°C in greased individual molds. Let rest.
  • Garnish with cilantro.
