Potato Cake with Bacon

  • 1 tablespoon olive oil
  • 1 tablespoon butter, diced
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups white onion, finely chopped
  • 2 tablespoons chives, finely chopped
  • 4 potatoes, slices 5 mm thick with skin
  • 1 pinch salt and pepper
  • 2 eggs
  • 1/2 cups whipping cream
  • 1/4 cups cow's milk
  • 30 slices bacon
  • 2 cups Manchego cheese, grated
  • 1 cup cheddar cheese, grated
  • 1/4 cups deli ham, diced

  • Preheat the oven to 200° C.
  • Heat a skillet over medium heat with olive oil and butter, cook the garlic with the onion, green onion, and potatoes until golden, season with salt and pepper to taste. Remove the potatoes and set aside.
  • Beat the egg with the cream and milk, season with salt and pepper. Set aside.
  • Place aluminum foil in a cast iron or oven-safe skillet, arrange the bacon strips and potatoes, alternating with a layer of cheeses and ham until covered, fill with the egg mixture, close with the bacon, and cover with aluminum foil.
  • Bake for 40 minutes. Remove from the skillet and carefully place on a tray, bake for an additional 10 minutes to color the bacon.
  • Remove from the oven, let rest, and slice.
