Potato Cake with Bacon

Prepare this exquisite cake of baked potatoes with melted cheese, wrapped in crunchy golden bacon. This delicious potato cake will make your guests suck their fingers, there is not a more delicious combination than the cheese with bacon and potatoes.

  • 1 tablespoon olive oil
  • 1 tablespoon butter, cut in cubes
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups white onion, finely chopped
  • 2 tablespoons chives, finely chopped
  • 4 potatoes, 5 mm thick slices with peel
  • 1 pinch salt and pepper
  • 2 eggs
  • 1/2 cups whipping cream
  • 1/4 cups milk
  • 30 slices bacon
  • 2 cups manchego cheese, grated
  • 1 cup cheddar cheese, grated
  • 1/4 cups Ham, diced


Preheat the oven to 200 ° C.
Heat a pan over medium heat with olive oil and butter, cook the garlic with onion, green onions and potatoes until golden brown, season with salt and pepper to your liking. Remove the potatoes and reserve.
Beat the egg with the cream and milk, season with salt and pepper. Reserve.
Place aluminum foil in a cast iron pan or suitable for baking, arrange the bacon slices and potatoes, alternate with a layer of the cheese and ham until covered, fill with the egg mixture, close with the bacon and cover with aluminum foil
Bake for 40 minutes. Remove from the pan and place carefully in a tray, bake 10 more minutes to add color to the bacon.
Remove from the oven, rest and cut into slices.


Serve a slice of delicious cake and vegetables.


You can add a little honey with paprika to your bacon so that at the time of baking it provides a spectacular color.
