Potato Tlacoyos in Green Sauce

  • 2 liters water
  • 1 tablespoon salt
  • 3 potatoes, peeled and cut into quarters
  • 2 tablespoons lard
  • 1/4 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups Cotija cheese
  • 500 grams masa dough
  • 1 kilo tomatillo, for the sauce
  • 4 serrano chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 cups fresh cilantro, for the sauce
  • 1 tablespoon vegetable oil, for the sauce

  • In a pot over medium heat, heat the water and cook the potatoes with salt until they are very soft.
  • For the filling, in a skillet over medium heat, heat the lard, add the onion, the potatoes, and mash until a puree forms, add the Cotija cheese, season with salt and pepper. Let cool and set aside.
  • Using your hands, form a ball of corn dough, hollow it out and fill it with a tablespoon of the potato filling, close it and shape it into a tlacoyo.
  • Heat a comal over medium heat, cook the tlacoyos for 5 minutes on both sides over low heat. Keep warm.
  • For the sauce, in a pot with boiling water, cook the tomatoes with the chiles, onion, garlic, and cilantro until they change color. Strain.
  • Blend the cooked vegetables until you obtain a sauce.
  • In a pot, heat the oil, pour in the sauce, and fry for 10 minutes, seasoning with salt and pepper.
  • Serve the tlacoyos and drizzle with green sauce, garnish with onion, cilantro, cheese, and cream.
