Preparation
In a saucepan over medium heat heat the water and cook the potatoes with salt until they are very soft.
For the filling, in a pan over medium heat heat the lard, add the onion, the potatoes and mash until a puree is formed, add the Cotija cheese, season with salt and pepper. Let cool and reserve.
With your hands form a small ball of corn dough, cup and fill with a spoonful of the potato filling, close and give it a tlacoyo shape.
Heat a comal over medium heat, cook the tlacoyos for 5 minutes on both sides over low heat. Reserve hot.
For the sauce, in a pot with boiling water, cook the tomatoes with the chilies, onion, garlic and cilantro until they change color. Sneak
Blend the cooked vegetables until a sauce is obtained.
In a pot heat the oil, pour the sauce and fry for 10 minutes, season with salt and pepper.
Serve the tlacoyos and bathe with green sauce, garnish with onion, cilantro, cheese and cream.
