In a pot over medium heat, heat the water and cook the potatoes with salt until they are very soft. For the filling, in a skillet over medium heat, heat the lard, add the onion, the potatoes, and mash until a puree forms, add the Cotija cheese, season with salt and pepper. Let cool and set aside.
