Potatoes with Parsley

Potatoes with parsley are a great side dish for any meat. You can also use them as a topping for your cod or hash.

  • Boil the potatoes in salted water. When they are three-quarters cooked, remove them from the water.
  • In a skillet, add olive oil and place the potatoes (you want them to brown but not burn).
  • Add coarse salt, garlic, and lemon juice.
  • Add the parsley at the end.
