Potatoes with Strips

These potatoes with strips are an excellent option as a side dish for your favorite dishes, sautéed with butter and onion. Besides being economical, you only need 10 ingredients to make this delicious side dish. We suggest eating them as a taco with red salsa.

  • 5 potatoes
  • 5 Poblano chiles
  • 1 teaspoon vegetable oil
  • 1 teaspoon butter
  • 1/2 white onions, chopped
  • 1 tablespoon garlic, chopped
  • 1/2 cups corn kernels, yellow
  • salt and pepper
  • fresh cilantro

  • On a cutting board, peel and dice the potatoes.
  • In a pot with boiling water and salt, cook the potatoes until soft. Drain and set aside.
  • In a griddle, roast the chiles until they are blackened, place them in a plastic bag for 15 minutes to sweat, then remove the skin and seeds. Cut them into strips and set aside.
  • In a skillet over medium heat, heat the oil with the butter, cook the onion and garlic, add the strips, potatoes, corn, oregano, salt, and pepper, and cook for 5 minutes.
  • Serve the stew in a tortilla and garnish with cilantro leaves.
