Stuffed Potatoes with Ham and Cheese

  • 3 potatoes, large
  • 1/4 cups butter
  • coarse salt
  • 1 cup bacon, diced
  • 1 cup deli ham, diced
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 190 grams cream cheese, 1 package
  • 1 tablespoon parsley
  • salt and pepper
  • 1 cup Manchego cheese, grated
  • parsley, finely chopped

  • Preheat the oven to 180° C.
  • Place the potatoes on aluminum foil, add butter and coarse salt, wrap and bake for 40 minutes.
  • Place the potatoes on a board, cut off the top, and using a spoon, hollow out the potato, reserving the filling.
  • In a medium skillet, fry the bacon, add the ham, onion, garlic, the potato filling, cream cheese, parsley, and cook for 5 minutes. Season with salt and pepper to taste.
  • Stuff the potatoes with the previous mixture and top with manchego cheese, bake for 10 minutes or until the cheese is melted and bubbly.
  • Garnish with parsley and serve hot.
