Tricolor Potato and Chorizo Casseroles

These tricolor casseroles are perfect to serve as snacks to your guests during patriotic celebrations. They have a little cream and are accompanied by pico de gallo that makes them irresistible.

  • 1 cup chorizo, chopped
  • 2 cups potato, cooked and diced small
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 20 chalupas, corn casseroles
  • 1/4 cups sour cream
  • 1 tomato, finely chopped
  • 3 serrano chiles, finely chopped

  • In a skillet over medium heat, fry the chorizo until cooked. Add the potatoes and cook for a few more minutes until golden. Season with salt and pepper.
  • Fill the chalupas with the potato and chorizo mixture.
  • Add a little cream to each chalupa, tomato, and chili.
