1 cup sunflower oil, for the mayonnaise
1/2 cups soy milk, for the mayonnaise
1 teaspoon apple cider vinegar
1 teaspoon lime juice
3 tablespoons Sriracha sauce
1 pinch coarse salt
1/4 cups cornstarch
4 tablespoons rice flour
1/4 tablespoons water
1 pinch salt
1/2 cups coconut oil
3 zucchinis, cut into sticks

Blend the vinegar with the lemon juice, sriracha sauce, milk, and gradually add the sunflower oil in a thin stream while blending.
In a bowl, mix the cornstarch with the rice flour, water, and salt until you have a thick paste that coats the product.
Coat the pumpkin sticks in rice flour and cover with the cornstarch mixture. Fry in hot coconut oil and drain on paper towels.
