Pumpkin Sticks with Sriracha Mayonnaise

  • 1 cup sunflower oil, for the mayonnaise
  • 1/2 cups soy milk, for the mayonnaise
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon lime juice
  • 3 tablespoons Sriracha sauce
  • 1 pinch coarse salt
  • 1/4 cups cornstarch
  • 4 tablespoons rice flour
  • 1/4 tablespoons water
  • 1 pinch salt
  • 1/2 cups coconut oil
  • 3 zucchinis, cut into sticks

  • Blend the vinegar with the lemon juice, sriracha sauce, milk, and gradually add the sunflower oil in a thin stream while blending.
  • In a bowl, mix the cornstarch with the rice flour, water, and salt until you have a thick paste that coats the product.
  • Coat the pumpkin sticks in rice flour and cover with the cornstarch mixture. Fry in hot coconut oil and drain on paper towels.
