Pumpkin Sticks with Sriracha Mayonnaise

Ingredients

10 portions
  • 1 cup sunflower oil, for mayonnaise
  • 1/2 cups soy milk, for mayonnaise
  • 1 teaspoon apple vinegar
  • 1 teaspoon lemon juice
  • 3 tablespoons Sriracha sauce
  • 1 pinch coarse salt
  • 1/4 cups cornstarch
  • 4 tablespoons rice flour
  • 1/4 tablespoons Water
  • 1 pinch salt
  • 1/2 cups coconut oil
  • 3 green pumpkins, cut into canes

Preparation

Blend the vinegar with the lemon juice, the sriracha sauce, the milk and add and liquefy the sunflower oil in the form of thread.
In a bowl add the cornstarch with the rice flour, water and salt until you have a thick paste that covers the product.
Pass the pumpkin sticks through rice flour and cover with cornstarch mixture. Fry with hot coconut oil and drain on absorbent paper.

PRESENTATION

Serve the pumpkin sticks with the siracha mayonnaise in the center.

TIPS

Make sure the mayonnaise ingredients are at the same temperature so they do not cut.
