Quinoa Yakimeshi

  • 1 cup Goya® tricolor organic quinoa
  • 1 1/2 cups water
  • salt
  • 1 tablespoon olive oil
  • 1 tablespoon chives
  • 1 tablespoon onion
  • 1/2 cups carrot
  • 1/2 cups pumpkin
  • 1 1/2 cups chicken
  • 1 egg
  • 1/4 cups soy sauce
  • chives, for garnish

  • In a small pot, add the organic tricolor quinoa Goya®, water, and salt. Cover and cook on low heat for 20 minutes. Set aside.
  • In a deep skillet, add the olive oil, then add the onion, green onion, carrot, and zucchini. Add the chicken and cook for 10 minutes.
  • Make a circle in the center of the skillet and pour in the egg, mix until cooked and integrated.
  • Add the organic tricolor quinoa Goya®, the soy sauce, and mix.
  • Garnish with green onion and serve hot.
