The classic moros con cristianos, rice with black beans. A simple and delicious dish that you can't miss. It’s the best way to accompany rich, soft, and fragrant rice. Give it a try.
Cook the black beans until softened in 4 cups of water, but without breaking them or letting the water evaporate, preferably in a pressure cooker.
Chop the garlic and onion into small cubes, and cut the chorizo and bacon into small pieces, fry all these ingredients in two tablespoons of oil and add the pepper, turn it off when everything is well fried and juicy.
Wash the rice and place it in a large pot, and mix well with the sautéed onion, garlic, chorizo, and bacon, add the beans and 3 cups of the bean water, cover and cook on low heat without stirring, until the rice is half cooked.
