Rice with Raisins

A Greek twist on rice with tomato, peas, and raisins. This is a different way to cook rice, adding ingredients like raisins that give a bit of sweetness and contrast with the peas, tomato, and all the other ingredients used to cook this rice.   • 3 teaspoons unsalted butter
  • 3 teaspoons onion, finely chopped
  • 2 cloves garlic
  • 2 leaves lettuce, thinly sliced
  • 8 button mushrooms, sliced
  • 4 tomatoes, medium peeled, pitted, and chopped
  • 2 cups rice
  • 4 cups chicken broth
  • 1 can peas
  • 1 bell pepper , cooked and cut into strips
  • 3 teaspoons raisins, sautéed in butter

  • Melt the butter in a heavy-bottomed saucepan.
  • Add the chopped onion and cook without letting it brown, then add the crushed garlic, lettuce, mushrooms, and tomatoes.
  • Let it cook for a few minutes and add the rice, stirring everything very well.
  • Finally, add the broth, salt, and pepper to taste, and let it cook until it starts to bubble (10 minutes).
  • Cover the pot and place it in the oven at 200°C for 30 minutes or until the rice is tender.
  • Remove the rice, fluff it with a fork, and add the butter, peas, bell pepper, and raisins.
