Rice Burgers

  • 1 1/2 cups Sos® rice minutes (instant), boiled
  • 1/2 cups wheat bran, ground
  • 1/2 cups flour
  • 1 onion, finely chopped
  • 1 clove garlic, chopped finely
  • 1 teaspoon fresh ginger, grated
  • 250 grams ear corn
  • 1 carrot, peeled and grated
  • 1 zucchini, grated
  • 3 tablespoons pine nuts
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 3 tablespoons plain yogurt
  • 2 egg whites
  • 1 1/2 cups breadcrumbs
  • olive oil, as needed

  • In a bowl, mix the first 10 ingredients.
  • In a blender, place the peanut butter, soy sauce, yogurt, and egg whites until well combined. Add to the previous mixture, stirring until they come together.
  • Shape 16 burgers and coat them with breadcrumbs. Heat some oil, fry each one until golden brown on both sides. Drain on paper towels. Serve with tomato and lettuce.
