This green rice gets its characteristic color from cilantro, which also adds fragrance and makes its flavor intense and delicious. You can eat it on its own or as a side dish accompanying any Mexican dish.
Heat the oil in a medium saucepan with a lid. Fry the oil, stirring frequently, until it looks transparent, but without letting it brown.
Blend the cilantro with the water and salt, grinding as much as possible. Pour over the fried rice and raise the heat to high. Let the liquid come to a boil and allow it to boil for 3 minutes. Reduce the heat to medium-low, cover, and cook for 20 minutes, until the water is absorbed and the rice softens.
Stir the rice with a fork to fluff it. Cover again and let it rest for 5 minutes before serving.
