Green Rice (cilantro)

This green rice takes its characteristic color of cilantro, which also perfumes it and makes its flavor intense and delicious. You can eat it alone or as a side dish accompanying a Mexican dish.

Ingredients

5 portions
  • 1 tablespoon oil
  • 1 cup rice
  • 1 bunch fresh coriander, disinfected
  • 2 cups Water
  • 1 teaspoon salt

Preparation

Heat the oil in a medium saucepan with a lid. Fry the oil, stirring frequently, until it looks clear, but do not let it brown.
Blend the cilantro with water and salt, grinding as much as possible. Pour over the fried rice and turn the heat to high. Let the liquid boil and let it boil for 3 minutes. Reduce the heat to medium-low, cover and cook for 20 minutes, until the water is consumed and the rice is softened.
Stir the rice with a fork to make it sponge. Cover again and let stand 5 minutes before serving.

TIPS

Let stand. Decorate with a leaf of coriander in the presentation.
