Rice Salad

Break the routine with this rice salad; you'll find it tastes just as delicious as many salads and will go a long way.

  • 1 envelope Knorr® Mi Arroz® White Rice Seasoning
  • 1 1/2 cups long grain rice, raw
  • 4 tablespoons vegetable oil
  • 3 1/2 cups water
  • 2 lettuce, the hearts, well sanitized
  • 1 1/2 cups cucumber, peeled, diced
  • 1 cup tomato, seedless, diced
  • 2 tablespoons capers
  • 1/4 cups olive oil
  • 1/4 cups rice vinegar
  • 1/8 teaspoons black pepper, freshly ground

  • Follow the package instructions. Wash the rice until the water runs clear, then drain well. Heat oil in a medium pot over medium heat and fry the rice gently, stirring to prevent breaking. It should turn a light golden color, and the grains will separate from each other. Remove any excess oil if necessary.
  • Pour out the water and the contents of the Knorr® MiArroz® white packet. Allow it to come to a boil, then reduce the heat to the lowest setting.
  • Cover and cook for 20 minutes or until the liquid has been completely absorbed. Let it cool.
  • In a separate bowl, mix cucumber, capers, tomato, oil, vinegar, and pepper.
  • When the rice is completely cool, gently mix it with all the ingredients and serve it garnished with lettuce hearts. It is very fresh and nutritious.
