White Rice with Corn and Poblano Pepper

  • 1 1/2 cups rice, soaked in hot water
  • 1/2 cups corn kernels
  • 1/2 cups Poblano chile strips
  • salt

  • 2 tablespoons lime juice

  • Blend the water with the garlic and onion. Set aside.
  • Heat the oil over medium heat, add the rice, and fry for 5 minutes or until lightly golden.

  • Let it rest for 5 to 10 minutes to finish cooking with the residual heat. Serve and garnish with cilantro.
