White Rice with Hearts of Palm and Artichokes

To start your meals with lots of flavor, prepare this recipe for white rice with hearts of palm and artichokes; it will add a special touch to all your meals.

  • 1 envelope Knorr® Mi Arroz® White Rice Seasoning
  • 1 1/2 cups long grain rice, raw
  • 4 tablespoons vegetable oil
  • 3 1/2 cups water
  • 1 can heart of palm, sliced
  • 1 cup artichoke heart, in brine, diced
  • 1/2 cups lime juice
  • 1/4 cups olive oil
  • 1/8 teaspoons black pepper, freshly ground

  • Follow the package instructions. Rinse the rice until the water runs clear, drain well. Heat oil in a medium pot over medium heat and sauté the rice gently, avoiding breaking it. It should take on a slightly golden color (very light) and the grains will separate from each other. Remove excess oil if necessary.
  • Pour in the water and the contents of the Knorr® MiArroz® Blanco packet. Let it come to a boil and reduce the heat to the lowest setting.
  • Cover and cook for 20 minutes or until the liquid has been completely absorbed. Allow to cool completely.
  • Mix lemon juice, oil, and pepper to make a simple vinaigrette, season lightly.
  • Combine the vinaigrette with the rice, hearts of palm, and artichoke hearts.
