Paella Jiutepec

  • 1 kilo Valencia rice
  • 1/4 cups olive oil
  • 4 cubes dry chicken broth or bouillon
  • 2 envelopes seasoning, for paella
  • 2 liters water
  • 2 cubes garlic powder
  • 1/2 kilos chicken thigh, cut into four
  • 1/2 kilos pork ribs, cut into 3
  • 250 grams Spanish chorizo, in slices
  • 1 kilo clams, clams
  • 1/2 kilos shrimp, with shell and head
  • 1/2 kilos smoked sausage, small
  • 150 grams mussels
  • 250 grams octopus, or squid in pieces
  • 2 cups green beans, frozen
  • 1 can red bell pepper, in strips

  • Boil the two liters of water
  • Add the chicken bouillon cubes, garlic, and paella seasoning. Meanwhile, heat the paella pan and add olive oil as desired.
  • Sear the thighs and ribs, then add the chorizo; once everything is well-seared, add the chicken broth prepared earlier.
  • Once it starts to boil, add the rice spread evenly across the paella pan.
  • When the rice begins to emerge from the water, add the ingredients in this order: Clams, octopus, sausages, mussels, green beans, shrimp, red bell pepper.
  • After all the ingredients have been added and arranged, use a wet cloth to cover the paella pan. Let it cook for another 15 minutes.
  • Check constantly. When the rice is almost done cooking, turn off the paella pan and let it rest for half an hour, so the rice absorbs all the liquids and finishes cooking.
  • Serve hot.
