Traditional seafood paella is a classic of Spanish cuisine; it is a very flavorful, hearty preparation ideal for the Lenten season. It is a perfect recipe for when you have guests at home.
For the seafood paella: heat a large skillet over high heat, fry the fat-free soy chorizo and remove from the pan. Add the fish fillet cut into large cubes, remove from the pan and add the shrimp to fry. Remove the shrimp, add the mussels, sauté them and remove.
Add olive oil to the pan and heat over medium heat.
Sauté the onion, finely chopped garlic, finely chopped tomato (seedless) and add the rice. Cook for 5 minutes, stirring constantly.
Add the fish broth, arrange the shrimp, mussels, fish fillet, soy chorizo, sliced bell pepper, peas, saffron, salt, and pepper.
Reduce the heat to low, cover with aluminum foil, and cook for 45 minutes.
Let it rest off the heat for 5 minutes, remove the aluminum foil and sprinkle with finely chopped parsley.
