Seafood Paella with Shrimp

The traditional seafood paella is a classic of Spanish cuisine, it is a very tasty preparation, ideal for the Lenten season. It is a perfect recipe for when you receive guests at home.

Ingredients

6 portions
  • 1/2 cups olive oil
  • 2 cups pre-cooked rice
  • 6 cups fish soup
  • 250 grams shrimp
  • 500 grams mussel
  • 250 grams fish fillet
  • 1 sausage, dry soy cut into slices
  • 1 green bell pepper, in rajas
  • 1 red bell pepper, in rajas
  • 100 grams pea
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon saffron
  • 1 clove garlic, finely chopped
  • 3 tablespoons parsley, finely chopped

Preparation

For seafood paella: heat a large skillet, at high temperature, fry the fat-free soy sausage and remove from the pan. Add the fillet of fish cut into large cubes, remove from the pan and incorporate the shrimp to fry. Remove the shrimp, add the mussels, sauté them and remove them.
Add olive oil to the pan and heat over medium heat.
Sauté the onion, finely chopped garlic, finely chopped tomato (without seed) and add the rice. Cook for 5 minutes, without stopping to move.
Add the fish stock, arrange the shrimp, mussels, fish fillet, soy chorizo, pepper cut into strips, peas, saffron, salt and pepper.
Lower the temperature to the minimum, cover with aluminum foil and cook for 45 minutes.
Let stand out of the fire for 5 minutes, remove the foil and sprinkle with finely chopped parsley.

PRESENTATION

Accompany with a green salad.
