Poblano Rice with Broccoli Bits

  • 1/8 onions
  • 1 clove garlic
  • 2 Poblano chiles, deveined, roasted, sweated, and peeled
  • 1/2 cups chicken broth, vegetables
  • salt
  • 1 tablespoon vegetable oil
  • 3 cups Eva® broccoli bits
  • 1 cup Poblano chile strips

  • Blend the onion with the garlic, poblano peppers, broth, and salt until you get a smooth mixture. Adjust seasoning.
  • In a pot, heat the oil over medium heat and cook the Eva® Broccoli Bits for a few minutes. Add the previous mixture and the strips, and cook over low heat until the liquid is absorbed.
  • Adjust seasoning and serve.
