Chard, Potato, White Bean, and Rice Stew

  • 100 grams rice legumes La Asturiana®
  • 300 grams bean, white
  • 1 onion
  • 1 green bell pepper
  • 2 cloves garlic
  • 1 bunch chard
  • 1 glass olive oil
  • 1 teaspoon sweet paprika, and salt

  • Soak the white beans the night before in double the amount of cold water relative to their volume. The next day, drain them and place them in a pot with the soaking water. Let them cook for half an hour, drain them again, and change the water.
  • In the pot, along with the beans covered with clean, cold water, add the chopped green pepper and onion in brunoise (small cubes) and finely chopped garlic cloves. Let it cook until the beans are tender.
  • Prepare the chard by removing the leaves, cleaning them under running water, and chopping the leaves. Reserve the chard stalks to boil and batter-fry them as a side dish for another meal.
  • Add the rice and chard leaves to the beans and let them cook until the rice is done, about 20 minutes.
  • Season with salt and a little paprika. Serve hot as a stew.
