Creamy Rice with Bacon and Sweet Potato

Prepare a creamy sweet potato rice with pieces of pork bacon, with this easy-to-make recipe. This is an easy and delicious side dish for any occasion, providing an irresistible contrast to your meals and classic rice. It is very important to add the broth in three parts to ensure even and slow cooking. You can also add a little heavy cream for extra creaminess.

  • 3 sweet potatoes, peeled and cubed

  • 1 pinch pepper
  • 1 cup whipping cream
  • 1 cup bacon, FUD® chopped pork
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups white rice, soaked and drained
  • 4 cups chicken broth
  • 1 sprig fresh rosemary
  • Parmesan cheese, for garnish

  • In a pot with boiling water and salt, cook the sweet potato for 10 minutes or until tender. Remove and drain.
  • In a food processor, process the sweet potato with nutmeg, paprika, salt, pepper, and heavy cream until smooth.
  • In a deep skillet over medium heat, cook the FUD® pork bacon until golden. Add the onion and garlic, cook for 1 minute, then add the rice. Fry for 5 minutes or until it starts to turn golden.
  • Add the sweet potato puree, mix well, and add one third of the broth. Lower the heat and cook for 10 minutes.
  • Add another third of the broth and let it evaporate slowly. Add rosemary, salt, and pepper. Once the liquid has almost evaporated, add the remaining broth. Cook until the rice is done.
  • Serve immediately, garnished with more fried bacon, Parmesan, and fresh rosemary.
