Moros con Cristianos

  • 2 cups water
  • 1/4 cups onion
  • salt
  • vegetable oil
  • 1 clove garlic
  • 1 cup rice, rinsed
  • 1 tablespoon lard
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 2 cups beans, cooked and drained
  • 1 cup bean broth
  • 1 teaspoon oregano
  • 1 teaspoon ground cumin

  • Blend the water, onion, and salt for 5 minutes or until the onion is well ground. Set aside.
  • Heat enough oil in a pot over medium heat and sauté the garlic. When the garlic is slightly golden, add the rice and fry for 5 minutes or until it slightly changes color. Then, pour in the previously blended mixture, reduce the heat to low, and cover the pot. Cook the rice for 10 minutes. Set aside.
  • Add the lard in a skillet, heat over medium heat, then add the onion, garlic, and cook for 5 minutes. When the ingredients change color, add the beans, mix, and cook for 2 more minutes. Add the bean broth, mix, and add the rice, cumin, and oregano. Cook the rice with beans for 2 more minutes and remove from heat.
  • Serve the moros con cristianos in a deep plate, garnish with cilantro leaves, and enjoy.
