1 1/4 cups mixed Sos® rice (wild with parboiled)
1 1/2 cups chicken broth
2 portobello mushrooms
1 tablespoon salt
1 leaf bay
3 tablespoons unsalted butter
3/4 cups onion, finely chopped
1/2 cups carrot , finely chopped
1 clove garlic
pepper, to taste

Heat the chicken broth in a pot over medium heat, remove from heat and add the mushrooms for 10 minutes.
Remove the mushrooms from the broth and chop finely (save the broth).
In a pot, bring 2 1/2 cups of water to a boil. Add the bay leaf, salt, and rice. Cook the rice for 45 minutes or until cooked.
In a large skillet, melt the butter and sauté the onion, carrot, mushrooms, and garlic for 5 minutes.
Add the rice and broth and cook for 10 minutes (most of the liquid should have been absorbed).
Season with salt and pepper and serve.
