Ingredients: 1 1/4 cups mixed Sos® rice (wild with parboiled); 1 1/2 cups chicken broth; 2 portobello mushrooms; 1 tablespoon salt; 1 leaf bay; 3 tablespoons butter; 3/4 cups onion, finely chopped; 1/2 cups carrot, finely chopped; 1 clove garlic; pepper, to taste

Heat the chicken broth in a pot over medium heat, remove from heat and add the mushrooms for 10 minutes. Remove the mushrooms from the broth and chop finely (save the broth).
