Tomato and Rice Soup

A delicious tomato soup recipe with rice, perfect to start the meal.

  • 9 tomatoes, peeled, washed, and seeded
  • 2 tablespoons tomato purée
  • 4 tablespoons butter
  • 1 cup onion, chopped
  • 2 cloves garlic
  • 1/4 cups rice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon pepper
  • 1/2 tablespoons dried thyme
  • 1/2 tablespoons Tabasco sauce
  • 6 cups chicken bullion

  • In a large pot, melt the butter and sauté the onion and garlic over medium heat for 3 minutes.
  • Add the tomato, the broth, the rice, the tomato puree, the Worcestershire sauce, the pepper, the thyme, and the Tabasco.
  • Lower the heat and cook for 30 minutes, stirring constantly.
  • Remove from heat and let cool for 5 minutes. Transfer the soup to the blender until fully chopped.
  • Put it back in the pot and let it cook for 3-5 minutes and serve.
