3/4 cups sushi rice, Thai rice (for making fried rice)
1 green apple
1 teaspoon honey
1 lime
parsley, to taste
15 walnuts
1 teaspoon extra virgin olive oil
1 teaspoon mirin (sweet rice wine)

Cook the rice following the package instructions (usually, place the rice with double the water in a covered pot on low heat for 15 minutes). Let the rice cool. Set aside.
In a covered container, place the honey, lemon juice, mirin, and oil, and mix thoroughly.
Cut the apple into medium cubes and add to the previous mixture. Cover to prevent the apples from browning. Set aside.
Wash, disinfect, and finely chop the parsley leaves and set aside.
Chop the walnuts into pieces and set aside.
In a large bowl, place the rice and pour the lemon mixture (with which you marinated the apples) over it. Mix carefully.
