Delicious red couscous to step away from the traditional white, as it contains blended tomatoes, mint, parsley, and dill that give it a different flavor. Ideal to accompany all types of meats.

5 cups water
1 red tomato
1/4 dill, clean with tail
3 sprigs parsley , clean
10 leaves peppermint
1 teaspoon salt
2 tablespoons olive oil
3 cups couscous, natural
Preparation

Low
Put all the ingredients in a pot except for the couscous to boil. Let it cook for approximately 15 minutes.
Blend everything we cooked, being careful not to burn ourselves as it is very hot. The mixture should be well ground without lumps.
Place the 3 cups of couscous in a bowl and add the blended mixture. Mix well with a fork, using gentle movements to avoid beating the couscous.
Let it rest covered for 5 minutes, and with the help of a fork, fluff the couscous, separating the grains.
