White Rice Ring with Rajas

This delicious Mexican rice is super easy to make and very tasty. Dare to prepare this white rice ring with rajas; it’s perfect for national celebrations.

  • 190 grams Philadelphia® cream cheese
  • 3/4 cups Poblano chile, in rajas
  • 1/2 cups corn kernels
  • 1 zucchini, cooked and cut into small cubes
  • 1 cup rice, soaked and well-drained
  • 2 tablespoons vegetable oil
  • 2 1/2 cups water, boiling
  • 1/4 onions, finely chopped
  • 1 clove garlic
  • 1 sprig parsley
  • 1 tablespoon chicken broth

  • Heat the oil and fry the rice until slightly golden along with the garlic and onion; remove the excess fat and set aside.
  • Add the boiling water, the parsley sprig, and the powdered broth; cover and cook on low heat for 25 minutes or until the liquid is absorbed.
  • Place half of the rice in a ring mold, pressing down with a spoon; spread the vegetables and cream cheese cubes.
  • Add the rest of the rice and press down with a spoon. Unmold and serve.
