Preheat the oven broiler (top) to the highest setting. Raise an oven rack as close as possible to the broiler.
Cut the zucchinis into 1 cm thick slices, place in a bowl along with the olive oil, salt, and pepper, and toss with a spatula to coat the zucchinis well.
Place the zucchinis on a baking tray and roast, being careful not to burn them. Once browned, turn them over and then remove them from the oven and arrange them on a platter.
Combine the mint with the lemon and the olives cut into quarters. Place this over the zucchini and mix gently. Garnish with sprigs of mint.
I can also make this recipe on the grill instead of using the oven.
