Roasted Zucchini with Mint

Experience the fresh flavor of roasted zucchini with mint and a little lemon. Be sure to try them as soon as possible!

  • 750 grams zucchini
  • 2 tablespoons olive oil
  • pepper
  • 8 black olives
  • 4 tablespoons peppermint, chopped
  • 2 tablespoons lime juice
  • peppermint, for garnish

  • Preheat the oven broiler (top) to the highest setting. Raise an oven rack as close as possible to the broiler.
  • Cut the zucchinis into 1 cm thick slices, place in a bowl along with the olive oil, salt, and pepper, and toss with a spatula to coat the zucchinis well.
  • Place the zucchinis on a baking tray and roast, being careful not to burn them. Once browned, turn them over and then remove them from the oven and arrange them on a platter.
  • Combine the mint with the lemon and the olives cut into quarters. Place this over the zucchini and mix gently. Garnish with sprigs of mint.
  • I can also make this recipe on the grill instead of using the oven.
