Ingredients

6 portions
  • 750 grams zucchini
  • 2 tablespoons olive oil
  • black pepper
  • 8 black olives
  • 4 tablespoons Fresh mint, chopped
  • 2 tablespoons lemon juice
  • peppermint, to decorate

Preparation

Heat the oven roaster (top) to the strongest. Raise an oven rack as close as possible to the grill.
Cut the zucchini 1 cm thick, put in a bowl with olive oil, salt and pepper, move with a spatula to cover the pumpkins well.
Put the pumpkins on a baking tray and roast, taking care not to burn. When browning, I turn them over and then I take them out of the oven and place them in a dish.
Stir the mint with the lemon and the olives divided in four. Put this on the zucchini and mix carefully. Garnish with sprigs of mint.
I can also make this recipe on the grill instead of using the oven.
