Romeritos for Christmas

A delicious and traditional Mexican recipe that is commonly eaten at Christmas. To cook the romeritos, you need to boil them with water and a little salt.

  • 1 kilo romeritos, clean and cooked
  • 500 grams potato, peeled and boiled
  • 1 cup dried shrimp, without skin
  • 500 milliliters chicken broth
  • 3 pasilla chiles, roasted
  • 3 ancho chiles, roasted
  • 1/4 cups toasted peanuts
  • 1/4 cups almonds, tostada
  • 1/4 cups raisins
  • 1 sprig cinnamon
  • pepper
  • vegetable oil

  • Blend the chicken broth with the chiles, raisins, peanuts, almonds, cinnamon stick, salt, and pepper.
  • Strain the sauce and set aside.
  • In a large skillet over medium heat, cook the sauce for 10 minutes.
  • Add the romeritos, potatoes, and shrimp to the mole, season with salt and pepper, and cook over low heat until it begins to boil.
