  • water
  • 500 grams romeritos, cleaned
  • salt
  • pepper
  • 1 package cream cheese
  • flour
  • 4 San Juan® eggs
  • vegetable oil, for frying
  • 1 cup mole sauce, in paste
  • 2 cups shrimp broth
  • 1 cup dried shrimp, peeled
  • 2 cups new potatoes
  • sesame seeds, for decorating
  • romeritos, blanched, for decoration

  • Cook the romeritos for 10 minutes in salted water until tender. Drain and cool.
  • Mix the romeritos with the cream cheese, season with salt and pepper, and with the help of a spoon, form patties.
  • Separate the San Juan® eggs into whites and yolks. Set aside.
  • Lightly beat the yolks until they change color, set aside.
  • On the other hand, beat the egg whites until stiff peaks form.
  • Gradually add the egg whites to the yolks and mix gently. Coat the patties by passing them through flour and then through the egg mixture.
  • Fry the patties in hot oil on both sides until golden brown. Drain on paper towels. Set aside.
  • Heat the shrimp broth, add the mole paste and cook until completely dissolved. Add the shrimp, the potatoes, and cook over low heat for 15 minutes, stirring constantly.
  • Serve the patties with the mole, and decorate with sesame seeds and fresh romeritos.
