Simple Mexican Rice

A simple and delicious recipe for Mexican rice with flavors of tomato, carrot, and peas.

  • 1 cup rice
  • 1 clove garlic
  • 2 teaspoons vegetable oil
  • 1 piece onion
  • salt
  • 1 carrot, in small cubes, previously cooked
  • 1/4 cups peas, previously cooked
  • 2 cups chicken broth, or water
  • 2 tomatoes

  • Soak the rice in warm water for 10 minutes, wash, and drain thoroughly.
  • Heat the oil in a saucepan over medium heat and fry the rice until it changes color, stirring constantly to prevent burning.
  • Blend the tomato with the onion, garlic, and chicken broth, strain; add the peas and carrot to the rice.
  • Season, lower the heat, cover, and cook for 15 minutes. Remove from heat and let it rest covered until ready to serve.
