Spiced Homemade Butter

  • 4 cups whipping cream, fried
  • 2 tablespoons chipotle chile, ground
  • 4 tablespoons walnuts, finely chopped
  • salt and pepper
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon chives, finely chopped
  • 1 tablespoon parsley, finely chopped
  • baguette, to accompany

  • In a cold bowl, whip the cream with a mixer on high speed for 8 minutes or until the whey separates from the cream.
  • Place the solid part of the previous preparation on a Bounty® paper towel and squeeze to dry the remaining whey.
  • Divide the butter into two parts.
  • To one part, add chipotle, walnuts, and season with salt and pepper.
  • To the other part, add garlic, scallions, and parsley, season with salt and pepper.
  • Place each butter on non-stick plastic wrap and roll up, refrigerate for 30 minutes to firm up.
