1 kilo puff pastry
1 kilo La Huerta® spinach
3/4 cups cottage cheese
250 grams Manchego cheese
1 cup sour cream
100 grams bacon
2 tablespoons butter
100 grams onion
1 egg

Chop the onion and bacon.
In a skillet, brown the bacon; once ready, add the onion until golden.
Add the La Huerta spinach to the skillet, season with salt and pepper to taste, cook for approximately 3 minutes and set aside.
Roll out the puff pastry to form two squares of approximately 30 cm.
Place the mixture of spinach with onion and bacon on the puff pastry.
Add the cottage cheese and manchego cheese on top.
With a knife, make slanted strips on the edges of the puff pastry to braid it.
Braid the puff pastry by placing one strip over another from side to side.
Brush the strudel with the egg.
Place in the oven at 200ºC for 15 minutes.
Remove from the oven and serve with chipotle cream.
