Spinach Tamales

  • 2 kilos masa dough
  • 2 cups spinach, chopped
  • 1 kilo Oaxaca cheese, or panela
  • 1 kilo tomato
  • 1 kilo Poblano chile, for rajas
  • 1 onion, slice
  • oil , to beat the dough
  • 1 cup chicken broth , or water
  • 2 cloves garlic, finely chopped

  • In a baking dish, knead the dough with a little oil and enough water to make a manageable paste, seasoning with salt to taste, then add the spinach and mix.
  • In a skillet, sauté the onion with the garlic and season with salt and a little garlic. Once seasoned, add the chiles and let them soften a bit.
  • Place a little of the mixture on a soaked leaf, add the chiles and cheese to taste, and close the tamale.
  • Cook for approximately 1 to 1.5 hours until the dough pulls away from the leaf.
