Ingredients

10 portions
  • 2 kilos tortilla dough
  • 2 cups spinach, chopped
  • 1 kilo Oaxaca cheese, or panela
  • 1 kilo tomtato
  • 1 kilo poblano pepper, for rajas
  • 1 onion, slice
  • enough oil, to beat the dough
  • 1 cup chicken soup, or water
  • 2 cloves garlic, finely chopped

Preparation

In a refractory, knead the dough with a little oil and enough water to make a dough that can be handled. If desired, add the spinach and beat.
In a pan, sauté the onion with the garlic and season with salt and a little garlic. Since it was seasoned, the peppers are added to soften a little.
Put a little of the mixture on a sheet and add the chiles and cheese to taste the tamale is closed.
It is left to cook for about 1 hour to an hour and a half until the dough is removed from the leaf.

TIPS

They can be accompanied by cream and a roasted tomato sauce.
