These delicious Spanish peppers are stuffed with goat cheese and seasoned with parsley, thyme, and sherry vinegar. They are tasty and very healthy.

250 grams goat cheese, low in fat
2 tablespoons shallot , finely chopped
1 stem chives, freshly chopped
2 tablespoons sherry vinegar
1 tablespoon fresh parsley, chopped
1 tablespoon fresh thyme, chopped

In a small bowl, combine the shallots, scallions, and vinegar. Season with salt and pepper.
Cut the top off each pepper to be able to stuff them.
Stuff the peppers with goat cheese.
Heat a large skillet over medium heat with cooking spray and cook the peppers for 30 seconds on each side.
Place the peppers on a serving dish and sprinkle the parsley and thyme. Then, using a spoon, drizzle the dressing over them and serve.
