Stuffed Piquillo Peppers with Goat Cheese

These delicious Spanish peppers are stuffed with goat cheese and seasoned with parsley, thyme, and sherry vinegar. They are tasty and very healthy.

  • 16 piquillo chiles
  • 250 grams goat cheese, low in fat
  • 2 tablespoons shallot , finely chopped
  • 1 stem chives, freshly chopped
  • 2 tablespoons sherry vinegar
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped

  • In a small bowl, combine the shallots, scallions, and vinegar. Season with salt and pepper.
  • Cut the top off each pepper to be able to stuff them.
  • Stuff the peppers with goat cheese.
  • Heat a large skillet over medium heat with cooking spray and cook the peppers for 30 seconds on each side.
  • Place the peppers on a serving dish and sprinkle the parsley and thyme. Then, using a spoon, drizzle the dressing over them and serve.
