  • 2 cups chicken, cooked and shredded
  • 1/3 cups mayonnaise, of chili
  • 1 tablespoon mustard, yellow
  • 1/4 cups fresh cilantro, finely chopped
  • 1/2 cups celery, finely chopped
  • 1/2 cups bacon, Fried and chopped
  • 1 tablespoon onion powder
  • 1/2 tablespoons garlic powder
  • salt

  • Heat water with salt in a small pot; when it boils, add the pumpkins and cook for 5 minutes. Drain and cool.
  • For the salad, mix the shredded chicken with the chili mayonnaise (just mix mayonnaise with dried chili powder and you're done), mustard, cilantro, celery, fried bacon, onion powder, garlic powder, salt, and pepper.
  • Using a knife, cut the ends of the pumpkins, cut them in half lengthwise, and scoop out the insides with a spoon.
  • Fill the pumpkins with the salad and decorate with fresh cilantro. Serve.
