  • 3 sweet potatoes
  • 2 tablespoons olive oil
  • salt
  • 1 cup cream cheese
  • 1 tablespoon butter
  • 1/2 cups red onion, finely chopped
  • 2 cups button mushrooms, sliced
  • 2 cups spinach, chopped
  • 1 teaspoon thyme
  • 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1/2 cups sour cream, for decoration
  • 1/2 cups bacon, finely chopped and fried

  • Preheat the oven to 200°C.
  • Place the sweet potatoes on aluminum foil, add olive oil and salt, wrap them up. Place them on a baking tray and bake until soft when pierced with a fork, about 40 minutes. Let cool.
  • Cut the sweet potatoes in half and use a spoon to remove the filling; in a bowl, mix it with cream cheese until fully integrated. Set aside.
  • In a skillet, melt the butter and cook the red onion, add the mushrooms, spinach, thyme, garlic powder, salt, and pepper. Cook for 5 minutes.
  • Fill the sweet potatoes with the cream cheese mixture, place some of the sautéed mushrooms on top, and decorate with cream and fried bacon.
