Stuffed Tofu Tomatoes

Healthy and delicious stuffed tofu tomatoes, they can be served as an appetizer or as a side dish.

  • 6 tomatoes, medium and round
  • 1 clove garlic
  • 2 tablespoons white miso paste
  • parsley, or dried basil
  • 1 tablespoon olive oil
  • 4 tablespoons water
  • 3 tablespoons Parmesan cheese
  • 200 grams tofu

  • Empty the tomatoes and place them in a baking dish.
  • Grind the rest of the ingredients in a mortar until perfectly incorporated. If desired, you can use a food processor and finely chop the mixture.
  • Stuff the tomatoes and sprinkle 1/2 tablespoon of Parmesan cheese on each tomato.
  • Bake at medium heat for 20 minutes.
