Stuffed Tofu Tomatoes

Healthy and delicious stuffed tofu tomatoes, they can be served as an appetizer or as a side dish.

6 tomatoes, medium and round
1 clove garlic
2 tablespoons white miso paste
parsley, or dried basil
1 tablespoon olive oil
4 tablespoons water
3 tablespoons Parmesan cheese
200 grams tofu

Empty the tomatoes and place them in a baking dish.
Grind the rest of the ingredients in a mortar until perfectly incorporated. If desired, you can use a food processor and finely chop the mixture.
Stuff the tomatoes and sprinkle 1/2 tablespoon of Parmesan cheese on each tomato.
Bake at medium heat for 20 minutes.
