  • 3/4 cups broken wheat, (bulgur)
  • water, hot
  • 4 red beefsteak tomatoes, cut into small cubes, seeded.
  • 1 white onion, finely chopped
  • 3 bunches parsley, finely chopped
  • 1/2 bunches spearmint, finely chopped
  • 1 cup lime juice
  • 1/2 cups olive oil
  • 1 1/2 tablespoons salt
  • 1 tablespoon pepper
  • jocoque, for serving
  • pita bread, for serving
  • chickpeas, cooked, for serving

  • Soak the bulgur in hot water in a bowl for 20 or 10 minutes, if it is precooked; drain and cool.
  • Mix the bulgur with the tomato, onion, parsley, mint, lemon juice, olive oil, salt, and pepper; let it rest for 10 minutes to integrate the flavors.
