Tamales

Tamales are traditional in Mexican cuisine and are made from a corn dough. With this recipe, you can create the typical green tamales or in green sauce.

  • 15 ears corn, large
  • 250 grams butter
  • 1 tablespoon baking powder
  • 1 kilo tomatillo
  • 2 serrano chiles
  • 1 clove garlic, finely chopped
  • 1/2 onions, chopped

  • The corn is washed and the kernels are removed.
  • The corn kernels are ground raw with a little bit of milk.
  • The butter is beaten separately and the corn and baking powder are added.
  • The tomatoes are boiled in a little water and then peeled.
  • A sauce is made by grinding the tomatoes, onion, garlic, cilantro, and chiles.
  • The sauce is fried in a pan with a little butter.
  • The corn husks (from those used in the recipe) are spread with the tamale dough and steamed for half an hour.
  • They are known to be cooked when the tamale unwraps and separates from the husk.
