Turkey Filling with Apple

A delicious filling of bread, apple, leek, and chestnut to accompany a tasty turkey.

  • 6 cups white bread, in thick cubes
  • 3 leeks, cut into cubes
  • 1 stick unsalted butter
  • 2 sprigs celery, chopped
  • 1 tablespoon thyme
  • 3 green apples, cut into cubes
  • 1 cup sour cream
  • 1/2 cups celery
  • 2 cups chestnut, or nut, chopped

  • Preheat the oven to 180 degrees Celsius.
  • Bake the bread on baking sheets for 15 minutes. Remove from the oven.
  • Increase the oven temperature to 220 degrees Celsius.
  • Melt the butter in a large skillet over medium heat. Cook the leek and celery in it for 10 minutes.
  • Add thyme, apples, and season with salt and pepper to the pan. Cover the pan and cook for 5 minutes or until the apples are tender.
  • Transfer the mixture to a large deep bowl and mix with the bread, chestnut/nut, cream, and parsley. Pour into a baking dish of sufficient size.
  • Bake the filling for 30 minutes or until the top is golden brown.
