Vegetable Skewers with Oaxaca Cheese

Following a vegetarian diet is no reason to skip Mexican snacks; that's why we adapted the traditional skewer recipe to a healthier and tastier version. Enjoy!

  • 8 Tía Rosa® Tortillinas® precooked floured tortillas

  • 1 cup white button mushrooms, sliced
  • 250 grams Oaxaca cheese, shredded

  • Heat the oil and sauté the onion, bell pepper, and carrot for about two minutes.
  • Add the garlic, poblano peppers, zucchini, and mushrooms.
  • Season with salt and pepper to taste and cook for about 5 minutes.
  • Add the shredded Oaxaca cheese and cover to let it melt.
  • Serve the vegetable skewers accompanied by Tortillinas® Precooked Tía Rosa®.
