Vegetable Skewers with Oaxaca Cheese

8 Tía Rosa® Tortillinas® precooked floured tortillas
1 white onion, in large cubes
2 yellow bell peppers, in sticks
2 carrots, in sticks
1 clove garlic, finely chopped
2 Poblano chiles, cleaned and in strips
2 zucchinis, in cubes
1 cup white button mushrooms, sliced
250 grams Oaxaca cheese, shredded
salt, and pepper to taste
1 tablespoon vegetable oil

Heat the oil and sauté the onion, bell pepper, and carrot for about two minutes.
Add the garlic, poblano peppers, zucchini, and mushrooms.
Season with salt and pepper to taste and cook for about 5 minutes.
Add the shredded Oaxaca cheese and cover to let it melt.
Serve the vegetable skewers accompanied by Tortillinas® Precooked Tía Rosa®.
